Meal Prepping Saves the Day


In my first week of I have upped my game in the food prep area. It’s important to me to make sure that I eat a good home cooked meal every night, but it doesn’t happen unless I do it in the morning. I plan what I’m going to have for dinner, talk with my mom to see if she’s OK with it, and then I pull all the pieces together and put it in very neat containers and stack it in the fridge in a bag for the evening. Then someone helps me with Cooking, or if no one is available, I will. I’m not the best at a hot stove, being temperature sensitive to heat.
I had some cut up veggies in the refrigerator, instead of a zucchini or red pepper going bad in the vegetable drawer, forgotten in a pile of veggies. It doesn’t matter how much good food you have in your refrigerator, it matters what you can gain access to when you need it. It’s much better to chop the veggies first I found, and then figure out what you’re going to have later. If it’s just a matter of a slice or a dice, does it really matter in the end? You’re still getting the nutrition don’t be so picky.
Then I had a package of chicken breasts, that I remove the Fax from, and pounded out with a meat tenderizer. This was probably the most cumbersome of everything to do, but the most necessary. Do you want nice juicy meat, and not with different thicknesses across the cutlet the cook unevenly.
Next to try to package of Palmini. I had ordered Palmini a couple of weeks ago and got it in a variety of options like angel hair, Palm heart rice, but tonight we would try the mashed potatoes. Actually not potatoes but palm hearts.
I use my Cuisinart to chop up two heads of garlic, which is good for four people. We threw some olive oil in a pan, and then some garlic, and when it started to get golden, we throw in the Palmini mashed.
The meals came out really good, sautéed chicken breast with zucchini and red peppers, with mushrooms and mashed “potatoes”.
If you are real mashed potatoes, fan, this palm, hard substitute is probably not going to fool you, but for the calorie savings that they bring, it’s well worth it.
I was completely full after this well prepped dinner, and have leftovers for tomorrow
For tonight‘s meal, I used my meal prep containers to package all the parts and pieces from Home Chef. Looking forward to the quick cook tonight. because of this planning virtue that I have realized, I am now a whiz at prepping dinners. They no longer grab a hold of me and intimidate me. I look forward to working on organization next week. This is a pretty cool self improvement project!
