Eating Clean – Palmini Primavera Recipe


Yesterday we had some family over for lunch, and we put out a healthy spread. We are lucky that our family likes to eat healthy like us.
There was a raw vegetable platter with various dips, including cava, chickpea hummus, and other items to food with the raw vegetables. it was so delicious, I didn’t want anything to go to waste
I chopped up the vegetables, left over in bite size pieces, and spread them out on a cutting board when we were finished.
I added, olive oil, fresh, chopped garlic and onions, since these were not in the crudites mix, once those were translucent, I started to add the vegetables, starting with the peppers and tomatoes, because they take a little longer to cook down.
The chopped broccoli and cauliflower went next, and then the zucchini, which is a quick sauté
I recently purchased a package of Palmini, recommended by my nutritionist, made of heart of palm linguini. It reminded me of Xutos, which I made from zucchini with the spiralizer.
I slowly toast the Palmini in with the vegetables, and it was a beautiful looking meal. Super easy to make, and super clean. I will say that my husband didn’t sit down to eat with this meal. I left him a package of Banza, which is linguine made from chickpeas. Get it? garbanzo? Banza?
The vegetable dish, perfect for a quick cook, and super healthy, and clean. No fresh veggies. Want to waste on this one, and I would definitely have Palmini again.
